Raw Vegan Chocolate Mousse


This one was inspired by Jazz. My friend, not the music. 

She posted this on Instagram and I wanted to Insta-eat it. That to me was a clear sign that I needed to Insta-make it. Oh and guess what I had in the pantry? All the necessary ingredients. BOOya! 


                              


The 'problem' was that the cashews needed to soak for 6 hours and the final product needed to freeze for an hour. My patience was not happy so we needed to compromise. In this case, it was easy as it could see the result was worth waiting for. 

So I know, blah blah blah, you actually just came to get the recipe.

Raw Vegan Chocolate Mousse
  • 1 C Cashews (soaked for 6 hours)
  • 2 Tbsp agave
  • 4 Tsp Coconut Oil. (Ok get this, I thought I had all the ingredients but still am out of coco oil. So you know what I did? I used 1/2 an avocado and 2 tbsp of the thick part of organic coco milk instead)
  • 1 Vanilla bean scraped (I used 1 tsp liquid)
  • 1/2 C Water
  • 2 Tbsp Caco powder
  • Banana or raw cacao nibs for topping. 

Get your out food processor and blend all the ingredients together. Wait, don't eat it yet! Put it in the freezer for an hour and distract yourself in the meantime.
