Totally Delicious Black Bean Brownies



I once made black bean brownies for my man's birthday cake... Ya. It didn't go over so well.

It's not that he wasn't happy with it, it was more a string of unfortunate circumstances. I think if I were to have done it again I would have done it differently. First, I would have definitely used a tastier recipe. Second, I might not have made them as the main birthday cake for his gathering of friends who don't get all that excited about things like brownies made of black beans. (Which I still cant understand.) Actually, there was no excitement, I more so noticed expressions of confusion and disgust. ("Black beans?....Um.... Why?") Third, I wouldn't have told anyone black beans were the main ingredient before they tasted them. 





Alas, life always presents learning opportunities. I lived and I learned. 

Since then, I put BBB's on the back burner. But this week, they came back into my life. With a vengeance. They wanted to prove themselves, to show me it is possible for them to be totally  delicious and loveable by anyone. So I got to work. 

I leafed through recipes, read reviews online, searched on all my favourite sites. Finally, with a few adjustments, I happily settled with a recipe that was simple, healthy and appeared irresistible. 

They didn't let me down. This one is totally delicious. It is flour-less, could be made vegan, no white sugar and no dairy. Tastes just like a regular brownie but BETTER, fluffier, lighter. Mmm hmm... now who's not excited about that?! 






Totally Delicious Black Bean Brownies
Makes 12 brownies

1 15oz can drained black beans
3 eggs (or mix 3 tbsp ground flax seeds with 9 tbsp water)
1/2 tsp baking soda
1/2 tsp baking powder
5 tbsp cocoa powder
1/2 cup honey or alt sweetner
3 tbsp oil (olive or melted coconut)
1 tsp vanilla
1 pinch sea salt

Blend it all together in a food processor, pour in a 9x9 inch baking pan and bake for 30min @ 350. Let cool completely before attempting to slice or taste. I know, its really hard, but try.
