I love it when I have a recipe idea and have all the ingredients in the fridge to create it. I also love creating meals that are so fast and super easy so the idea can get in my belly asap. The last thing I love is colourful food that looks pretty. This recipe pretty much sums that all up.
What you need (for 2)
Noodles
- 4 carrots
- 1 tbsp coconut oil
Creamy Avo Sauce (from this site)
- 1 avocado
- 1/2 tsp salt
- coconut oil
- 1/2 lemon
- 2-3 cloves of garlic
- 2 tbsp olive oil
Noodles
- A thick veggie peeler works wonders for this, just peel your carrots and put them in a pretty pile.
- Bring a pan of water (about 1/2 full) to a boil, add the carrots and let them boil for about 2 minutes - 3max.
- Drain water and add coconut oil, fry for a couple minutes just for added flava and to steam off the water.
Avocado Cream Sauce
- So easy. Put all the ingredients in your food processor and blend away. I added some cilantro to this and it was good but you could put in some basil instead.
- It turns into this beautiful creamy thing.
La Fin
Put the carrot noodles on a plate. Scoop a couple spoonfuls of sauce on top. You will probably want to take a picture of it before you eat it. So creamy, so noodley, so good.
